Most wines are still and fermentation in the bottle should not occur otherwise the wine is unpleasantly fizzy and no one wants exploding wine bottles!
Wine stabiliser (potassium sorbate) E202 is used in conjunction with Campden tablets to prevent this. Normally 1 gram per gallon is used.
