Flaked barley is an unmalted grain that has been fed through heated rollers which gelatinize the starch, which means there is noneed to pre-boil these grains before mashing. Flaked barley gives a pleasant smooth grainy finish to the beer and improves head retention. Typical use is 100 - 400. per 23 litre brew. Using too much may cause haze problems. Brewmonkey recommends that flaked barley should be mashed rather than steeped.
